Fonts that can be emulated are fonts that can be represented on screen, even if the font is unavailable on your system and even though it has not been embedded. If you are certain the document only needs to be viewed on screen, and will not be printed, fonts that can be emulated do not need to be embedded. This makes your PDF lighter, for example for distribution on the internet.
To select fonts and then unembed them:
