You can specify how much the actual gray in the document is allowed to deviate from "true" gray (i.e. gray which doesn't have tones of any other color; for RGB this means that the percentage of Red, Gray and Blue is the same; for CMYK, this holds for Cyan, Magenta and Yellow).
